  Cheesy Potato Casserole






Ingredients:

  • 6 large potatoes, peeled and thinly sliced
  • 2 cups grated cheddar cheese
  • 1 cup milk
  • 2 cloves of garlic, minced
  • 1 onion, chopped
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • Salt and pepper to taste
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour


Instructions:

  1. Preheat oven to 350°F. Grease a casserole dish.
  1. In a large pot, boil potatoes until tender. Drain and set aside.
  1. In a saucepan, melt butter over medium heat. Add garlic and onion and sauté until softened.
  1. Stir in flour and cook for 1-2 minutes. Slowly pour in milk, whisking constantly to prevent lumps. Cook until mixture thickens.
  1. Stir in thyme, parsley, salt, and pepper.
  1. In the prepared casserole dish, layer half of the potatoes and half of the cheese. Pour half of the sauce over the potatoes. Repeat with remaining potatoes, cheese, and sauce.
  1. Bake for 30-35 minutes, or until cheese is melted and bubbly.
  1. Let cool for a few minutes before serving. Enjoy!

Note: You can add some diced bacon or ham to the recipe for some extra flavor. Some people also like to add some breadcrumbs on top of the casserole before baking for a crispy texture.
